Ciao Paride, LaTeX è impegnativo un po' per tutti anche per i più esperti, quindi non darti per vinto se all'inizio ti compaiono errori di compilazione! Per quanto riguarda l'editor Gummi, da anche a me ogni tanto il tuo stesso problema e ho risolto così: inverto i commenti, compilo con F9, chiudo e riapro il file "main.tex".

Per inserire una nuova foto ti basta copiarla nella stessa cartella di "main.tex" e sostituire "profile" con il suo nome senza estensione qui:

\ecvpicture[trim=0pt -10mm 0pt -5mm, width=3.33cm]{profile}

Evita nomi che contengono spazi o caratteri strani e usa il formato JPEG o PNG. Spero di esserti stato utile.
